Summary:
Pineapple fish have a symbiotic arrangement with luminescent bacteria, which gives the fish built-in headlights (although, they are really just light organs on the lower jaw). The bacteria are always ‘on’, so for ‘lights out’ the fish simply closes its mouth, hiding the bacteria.
